Apple cookies

A "much later" -- but well worth it! -- recipe

Ingredients
 
2c mixed sunflower and pumpkin seeds, soaked overnight
2-3 apples
2 bananas (optional)
1/2c raisins
1 t vanilla
1 t cinnamon
2 T honey
1 c walnuts, soaked overnight and chopped
 
Directions:
Process all, adding walnuts at the very end.  Spoon onto dehydrator trays and dry at 105 degrees for 6-12 hours. 
 
I like my cookies firm, so I leave them overnight to dry.  I also nibble while they're drying, too!
 
I have made this recipe without bananas before, adding the 3rd apple in instead.  The cookies were much firmer and had a molasses taste, especially when dried longer than usual.  The bananas add a moist center that doesn't quite get firm.
